Sein Aussehen ist weißes kristallines Granulat oder kristallines Pulver, seine Süße beträgt etwa 60-70% der Saccharose, die Löslichkeit in Wasser beträgt 37% (25 °), in Ethanol leicht löslich und in Ether unlöslich. Der Schmelzpunkt ist 119-123 ℃ und der Siedepunkt beträgt 331 ℃.

Erythritol hat sehr kalorienarm und hat ein cooles Gefühl. Grundsätzlich verursacht es keine Schwankungen des Insulin- und Blutzuckerspiegels. Es ist Nicht-Ciars und kann die Proliferation von Darmbifidobakterien fördern, sodass es nicht von den meisten nicht-nützlichen Darmbakterien verwendet wird. Stabil zu Säure, Wärme und auch keine Maillard -Reaktion.
